Recipe: Scalloped Tomatoes

I first discovered what became this recipe at the historic Mary Mac's Tea Room in Atlanta about 10 years ago. At Mary Mac's, it is called "tomato pie." As I became more exploratory with food from all over the south around the same time, I picked up a copy of one of the first cookbooks I ever owned: the classic from the queen of southern cooking herself, Ms. Edna Lewis - The Taste of Country Cooking. In this cookbook, Ms. Lewis called her version "scalloped tomatoes," opining that the technique and style originated in French cooking and was brought to the US via French Creole settlers. I began with her classic recipe and have made many different versions - including one more like the "tomato pie" at Mary Mac's. I've now settled in with this version which has a more French country/Provençal flavor profile. The key is to use heirloom tomatoes, especially ones of varying colors that give this dish its rich tomato flavor profile. Unfortunately I know heirlooms are only in season in most places for about half of the year. It is possible to use good quality on-the-vine tomatoes in the recipe, just realize it won't come out quite the same. I've also added a West Coast twist by using a San Francisco sourdough baguette. However, any freshly made French baguette will work.

Scalloped Tomatoes


Ingredients


6 - 8 large heirloom tomatoes
1 large sweet onion, diced
1 large sourdough baguette, cut into 1 inch cubes
2 tbsp. of olive oil
8 oz. of thick, uncured slab bacon, diced
4 tbsp. of butter (1/2 stick)
2 tbsp. of minced garlic
1 tsp. of black pepper
1/2 tsp. of white pepper
1/4 tsp. kosher salt
2 tsp. of dried Herbs de Provence
1 1/2 cups shredded Parmesan cheese
1 cup fresh chopped Italian basil

Directions


Spread baguette cubes out on a large baking sheet, drizzle with olive oil and toss together to fully coat, and bake at 400 degrees for about 5 minutes or so to toast.

In a skillet, melt the butter over medium heat and add the diced bacon. Cook until the bacon starts to brown, about 7 - 8 minutes. Once the bacon has started to brown, add the onion, cover, and cook until the onion is translucent and starts to brown. Add minced garlic and cook for about 1 min more until you can smell the garlic. Remove from heat.

Reduce heat on the oven to 325 degrees. Dice the heirloom tomatoes and put into a large bowl. Add the baguette croutons, bacon mixture, and the other dry spices to the bowl. Mix thoroughly. Coat a large casserole dish with cooking spray. Pour the tomato mixture into the casserole dish, cover evenly with the parmesan cheese, and bake for 50 minutes. Let cool for about 5 minutes. Mix in fresh basil before serving.

Makes 6 - 8 servings.

Recipe: Cauliflower and Parsnip Gratin

This recipe is a fusion of knowledge and flavors from several southern casserole recipes that have been favorites in my family throughout my life with some classical French ingredients and technique. One of the things I've concentrated on over the past several years of cooking is technique - and that has led to great improvements in many of my recipes. This recipe is admittedly quite rich and is best served in as a side dish. As you can see, I served it recently with a grilled New York strip steak seasoned simply with salt and pepper.

Cauliflower and Parsnip Gratin


Ingredients


1 head of cauliflower, florets separated
3 large parsnips, peeled and cut into 3/4" chunks
1 1/2 cup of milk
2/3 cup of heavy cream
1/2 cup of dry white wine (Sauvignon Blanc or similar)
1 cup of grated gruyere cheese
2/3 cup of grated sharp cheddar cheese
1/2 cup of grated parmesan cheese
4 tbsp of unsalted butter
2 large shallots, minced
6 cloves of garlic, minced
2 tbsp Wondra flour (or well sifted all-purpose flour)
2 tsp white sugar
1 tsp of fresh lemon zest
1 tsp celery salt
1/2 tsp smoked paprika
1/2 tsp ground sage
1/2 tsp dried thyme
1/2 tsp cayenne pepper
1/2 tsp ground white pepper
1/2 tsp ground black pepper
1/4 tsp ground nutmeg
2 sleeves of Ritz crackers (or other butter crackers), crumbled (approx. 3 cups)

Directions


Preheat oven to 375 degrees. Coat a 9" x 13" casserole dish with cooking spray.

Fill a large pot 2/3 of the way with water and heat until boiling. Once boiling, reduce heat to medium. Add chopped parsnips. Simmer parsnips for 5 - 7 minutes. Add cauliflower and continue simmering for 4 - 5 minutes. Drain the vegetables in a colander and set aside.

In a medium saucepan over medium heat, melt the butter. Once the butter is fully melted, add the shallots. Cook the shallots until they begin to brown and are softened, stirring frequently (approximately 5 minutes). Stir in the garlic. Using a whisk, add the Wondra flour and mix into the butter, onion, garlic mixture until fully absorbed. Add 1/2 cup of the milk and the white wine. Whisk until any flour lumps disappear. Continue to whisk constantly for approximately 3 - 4 minutes. Add remaining milk and all of the heavy cream. Raise heat to medium high. Continue whisking fairly frequently until the mixture begins to bubble and simmer. Reduce heat to low and add all shredded cheeses, the sugar, lemon zest, and all dry spices. Continue to whisk until the mixture becomes smooth and all the cheese is melted and incorporated (approximately 6 minutes).

Cover the bottom of the casserole dish with 1/2 of the crumbled Ritz crackers. Put vegetables into the casserole dish and spread out into an even layer. Pour cheese sauce over all of the vegetables, coating evenly. Use the back of a spatula to smooth out the mixture as much as possible. Spread the remaining crumbled Ritz crackers all over the top. Place into the oven and bake for 35 minutes until the top crust has browned and the casserole is very bubbly. Take out of the oven and allow to rest for at least 5 minutes before serving.

Makes 16 - 20 servings as a side dish.

Recipe: Tokyo Turnip and Potato Hash

I have not posted in a while, I know, but real work has kept me way too busy to be as creative as I generally am. But, today, I got more inspired. So here goes... it was excellent and the picture is of the finished product.

Ingredients:

6 small Tokyo turnips, diced, greens separated and cut in thirds (yes, you will use the greens in this recipe, too :))
1 large russet potato, diced
1 small sweet pepper, diced (I used a Flamingo pepper)
1 bunch of scallions, diced, green and white parts
4 strips of bacon, diced
2 tbsp. unsalted butter
1/2 tsp. cracked red pepper
1 tsp. celery salt
1/2 tsp. dried tarragon
1/2 tsp. dried thyme
2 tbsp. minced garlic
3 tbsp. grated parmesan cheese

Directions:

Boil a medium pot of water. Generously salt the water. Place the potatoes into the boiling water for about 5 - 6 minutes to blanch and soften. Drain, set aside.

Heat the bacon and butter over medium heat until the bacon is almost crisp, stirring frequently. Add the minced garlic and saute until the bacon is fully crisp. Add the turnips, sweet pepper, potato, scallions, and spices. Continue sauteing for about 8 - 10 minutes until the turnips soften. Place the turnip greens into the pan, cover, and allow the greens to wilt for about 3 - 4 minutes. Stir all the ingredients together fully, top with the parmesan cheese and mix together again, serve immediately.

Makes 2 entree or 4 side dish servings.

Recipe: Zucchini and Eggplant Casserole

I know it has been quite a while since I have posted one of my great recipes up here... life just has this persistent tact of getting all in the way of blogging. But, hey, at least y'all know I haven't completely disappeared! I made this recipe last night. My roommate and friend both really liked it. Hope y'all enjoy!

Ingredients:

1 large eggplant, cut into 1 inch chunks
4 large zucchini, cut into 1 inch chunks
3 cups of wild mushrooms (oyster, trumpet, shitake, etc.)
1 large sweet onion
6 slices of thick slab bacon, diced
1/2 stick of unsalted butter
1/2 cup of heavy cream
3 large eggs
1 cup of shredded Parmesan cheese
1 cup of shredded Asiago cheese
2 tbsp. of Herbs de Provence
1 tbsp. of sea salt
2 tbsp. of garlic powder
1 1/2 tbsp. of white pepper
1 1/2 cups of bread crumbs
Cooking spray
Extra sea salt (to sweat eggplant)

Directions:

Place cut eggplant into a large colander. Coat generously with sea salt. Cover colander with a plate and press down to apply some pressure. Let sit in the sink for at least 4 hours to allow the eggplant to sweat out most of the bitter juices.

Preheat oven to 350 degrees. Generously spray a large 9" x 13" casserole dish with cooking spray. In a large, deep skillet, turn the heat to medium high and melt the butter. Once butter is melted, add the diced bacon. Cook until bacon is slightly crisped. Loosely chop the mushrooms and onion and place into a food processor. Pulse until finely chopped. Add to the skillet with the butter and bacon and stir with a wooden spoon to evenly distribute. Add the sweated eggplant, zucchini, salt, white pepper, garlic powder, and Herbs de Provence. Stir to combine well. Cover the skillet and cook for 25 - 30 minutes until the zucchini and eggplant are very tender and can be mashed apart with the wooden spoon, stirring every few minutes. Once the mixture is tender and mushy, turn off the heat and add the cheeses and stir in to combine evenly. Transfer the entire mixture to the greased casserole dish.

In a small bowl, whip the eggs into the heavy cream. Pour the egg mixture over the casserole and stir in to distribute the egg mixture evenly throughout the casserole. Sprinkle the bread crumbs evenly over the top of the casserole. Place in the preheated oven and bake first for 20 minutes. Take out from the oven and generously spray the bread crumbs on top with a layer of cooking spray (this will help brown the top). Place back in the oven and cook for an additional 10 minutes. Remove and allow to cool for 5 - 10 minutes before serving.

Serves 6 as a main course or 12 - 14 as a side dish.

Recipe: Ultimate Lasagna

This recipe is just off the frackin' chart... I made this tonight for like the 4th time, but I made some modifications that sent it into the stratosphere... total comfort food :)

Ingredients:

1 1/2 lbs. ground sirloin
1 large eggplant
5 cups (32 oz.) of diced tomatoes
1 cup (8 oz.) of tomato paste
1 lb. baby spinach
1 large onion, diced
1 cup fresh basil, chopped
1 cup fresh parsley, chopped
6 tbsp. minced garlic
2 tsp. red chili flakes
2 tsp. ground sage
2 tsp. ground oregano
2 tsp. dried tarragon
3 tsp. salt
2 tsp. black pepper
1 cup chicken stock
2 lbs. part-skim ricotta cheese
2 cups romano cheese, shredded
2 cups parmesan cheese, shredded
3 eggs, lightly beaten
1 lb. dry wide lasagna pasta (1 box)
3 tbsp. olive oil

Directions:

Slice the eggplant into 1/4 inch thick slices and place into a colander. Liberally salt all of the slices and cover with a plate. Let the eggplant sweat and drain overnight in the sink.

In a large pot, heat the olive oil over medium high heat. Add the eggplant and saute for about 5 minutes, stirring frequently. Add in all of the other ingredients except for the pasta, meat, eggs, and cheeses and stir to combine. Reduce the heat to low, cover, and simmer for 1 hour until the eggplant is mushy, stirring and mashing the ingredients together using a wooden spoon about every 10 minutes.

Cook the ground sirloin over medium high heat until browned. Add to the sauce mixture and stir to combine. Add the ricotta and stir vigorously until fully combined through. Add the beaten eggs and stir vigorously to combine through. Set aside.

Preheat oven to 400 degrees. Cook the pasta according to package directions. Take a large 13 x 9 baking dish and spray down with cooking spray. Place 1/3 of the sauce/meat mixture into the bottom of the baking dish. Top with 1/3 each of the parmesan and romano cheeses in an even spread. Top with 1/3 of the lasagna pasta sheets. Repeat this until you have a final layer of pasta on top. Cover the baking dish with aluminum foil. Place in the oven and bake for 35 minutes. Let cool for 10 minutes before serving.

Makes 10 large servings.

Recipe: Seafood Risotto

I made this for a friend of mine who was here a couple of weeks ago... and still have some in the freezer that I'll get around to eating ;). It turned out really well!

Ingredients:


1 lb. of 30 - 40 count shrimp, peeled and deveined
1 lb. of small bay scallops
2/3 lb. of lump dungeness crab meat
2 cups of asparagus, blanched and diced
3 1/2 cups of arborio rice
1 1/2 cups of dry sherry
5 1/2 cups of chicken broth
4 tbsp. of butter
2 tsp. of salt
2 tsp. of white pepper
3 tbsp. chopped fresh basil
3 tbsp. chopped fresh tarragon
2 tbsp. minced garlic
2 tsp. dried oregano
2/3 cup shredded parmesan
2/3 cup crumbled gorgonzola
2 tbsp. of olive oil

Directions:


In a large pan, melt the butter over medium heat. Once the butter is melted, add the seafood and stir to evenly distribute the butter. Add the salt, white pepper, minced garlic, and dried oregano. Continue stirring frequently, cooking the seafood. All of the seafood should cook in about 8 - 10 minutes. When the shrimp turn a nice shade of pink, you know you're done. Add the fresh basil and tarragon, stir to incorporate and set aside.

In a large pot, heat the olive oil over medium heat. Once the oil is hot, add the arborio rice to the oil and stir to coat all rice kernels with the oil. Continue heating and turning frequently until the rice starts to turn a light brown color. Not all rice kernels will turn brown, but you don't want any getting too brown - those will be burnt! Once the rice has started to turn color, add the dry sherry to the pot and stir to incorporate. Continue stirring until almost all of the liquid has been absorbed by the rice - but not so much that the rice starts sticking to the bottom of the pot! Add 1/2 cup of the chicken broth and repeat this process - stirring until the liquid is absorbed. Once absorbed, add another 1/2 cup of the chicken broth. Continue this process until you're out of chicken broth and all of the liquid is absorbed.

Add the diced asparagus and the seafood mixture you completed earlier to the pot and stir to evenly incorporate. Add the parmesan and gorgonzola cheeses and stir to incorporate evenly. Turn off the heat and let sit for about 3 minutes. Serve as a main course.

Makes 8 main course servings.

Recipe: Moussaka My Way

For those of you who have Greek heritage, please don't stone me for making this without a true bechamel sauce - I happen to be watching my waistline, so I chose to make a savory tomato sauce instead. Since I've had a tomato-based version in Greek restaurants before, I figure I can't be THAT far off ;)

Ingredients:

3/4 lb. lamb loin
1/2 lb. boneless, skinless chicken breast
1 1/2 cup(s) canned tomatoes
1 cup(s) canned tomato paste
2 tbsp unsalted butter
1 cup red wine
1 tbsp olive oil
2/3 cup(s) grated Parmesan cheese
1/2 cup of panko
1 large eggplant, peeled and sliced into 1/4 inch slices
2 large potatoes, sliced into 1/4 inch slices
1/2 cup fresh chives, chopped
1 cup fresh basil, chopped
1 tsp ground oregano
1 tsp dried thyme
2 tsp dried tarragon
1 tsp black pepper
1 tsp dried mint
1 tsp onion powder
1/2 tsp ground nutmeg
Salt

Directions:

Preheat oven to 350. Coat a 9x13 casserole dish with cooking spray.

Place peeled and sliced eggplant into a colander and coat with salt, allow to drain for 30 mins. to 1 hour.

Cut the lamb loin and chicken breast into 1/4 inch cubes. Melt the butter in a large saucepan. Place the lamb pieces into the saucepan and cook until cooked through, stirring frequently, about 10 minutes. Add the chicken and continue cooking for about 5 - 6 minutes. Add the red wine to deglaze the pan. Add in the chives, basil, oregano, thyme, tarragon, pepper, mint, and onion powder. Stir in the tomatoes and tomato paste. Lower heat to low to keep warm. Sauce should be the consistency of a thick pasta sauce.

In a non-stick skillet, heat the olive oil over medium-high heat. Saute the eggplant slices for about 1 minute on each side. Line the bottom of the casserole dish with the eggplant. Top with 1/2 of the tomato sauce mixture and 1/2 of the parmesan cheese. Use the sliced potatoes to make the next layer, top with the remaining tomato sauce mixture and parmesan cheese and sprinkle the panko over the top. Place in the oven and bake for 45 minutes.

Makes 6 servings.

Recipe: It Ain't Your Mama's Chicken Katsu!

OK... so it ain't my mama's either (she's from Georgia like me!), but if your mama is Japanese, it ain't like hers either ;) But it's GOOD!!! Serve with katsu sauce, of course!

Ingredients

1 cup of panko (Japanese bread crumbs)
1/4 cup flour
1 egg
1/8 cup of milk
3 tsp. garlic powder
3 tsp. onion powder
2 tsp. paprika
1 tsp. white pepper
1 tsp. salt
2 tbsp. grated parmesan cheese
1 1/2 lbs. boneless/skinless chicken breast filets
2 cups canola oil (for frying)

Directions

Cut breast filets into approximately 3 oz. portions (can usually be accomplished by cutting filets from the grocery store in half).

Heat canola oil in a large frying pan over medium-high to high heat.

Combine panko, flour, spices, salt, and parmesan cheese together in one bowl. In another, whisk the egg and milk together. Dip the breast filets into the egg wash first, then into the panko mixture, coating the filet thoroughly and as thickly as possible with the mixture. Working in batches, place into the hot oil frying for approximately 3 minutes on each side. Have a large paper bag (Whole Foods bags work well ;)) or line a baking sheet at least 4 paper towel layers thick ready to place the fried filets on to drain oil. Serve immediately!

Serves 4.

Recipe: Baked Eggs Provencal

This is a very simple breakfast dish... serve with toasted sliced French bread!!! :)

Ingredients:

8 large eggs
3 tsp. of minced garlic
1/2 cup of heavy cream
3 tbsp. of butter
2 tsp. Herbs de Provence
1 tsp. salt
1/2 tsp. cracked red pepper
1 1/2 tbsp. of grated parmesan

Directions:

Preheat oven to 425 degrees. Crack all the eggs into a separate bowl, being careful to keep them whole and not puncture the yolks. In a small saucepan on the stove over medium heat, melt the butter into the heavy cream. Pour the cream and butter mixture into the bottom of a medium gratin dish. Slowly pour the eggs into the gratin dish - they will start to cook immediately. Sprinkle the garlic, Herbs de Provence, salt, cracked red pepper, and parmesan over the eggs. Place the gratin dish into the oven and bake for about 8 minutes. Serve immediately.

Makes 4 servings.

Recipe: Shrimp and Crab Gratin

This dish is just absolutely decadent... I made it last night for friends of mine who were over for some wine and chit-chat. Everyone loved all the dishes I made, but this one was their favorite...

Ingredients

1 lb. of large shrimp, peeled and deveined
1 lb. of lump crab meat (dungeness crab is the best! :))
3 cups of diced white potatoes
3 cups of diced parsnips
2/3 cup of fresh parsley, loosely chopped
1/4 cup of fresh chives, chopped
2 1/2 cups of Gruyere cheese, shredded
1 1/2 cups of Parmesan cheese, shredded
2/3 cups of bread crumbs
2 cups of heavy cream
1 stick of unsalted butter
3 teaspoons of salt
2 teaspoons of black pepper
3 tablespoons of all-purpose flour

Directions

Preheat oven to 400 degrees. Spray a large casserole dish with cooking spray to coat. Put the potatoes and parsnips in a layer on the bottom of the dish. Sprinkle the parsley and chives over the vegetables. Place the shrimp and crab meat over the vegetables in an even layer.

In a large saucepan over medium heat, melt the butter into the heavy cream. Add the salt and pepper. Add the Gruyere cheese to the cream mixture and whisk until the cheese fully melts. Whisk in the all-purpose flour. Remove the mixture from the heat and pour it all over the other ingredients in the casserole dish. Sprinkle the bread crumbs in an even layer over the top. Place the casserole in the oven and bake for 30 minutes. After 30 minutes, sprinkle the Parmesan cheese evenly over the casserole and return to the oven. Bake for an additional 15 minutes or until the Parmesan layer on top is nice and browned. Remove from the oven and let set for a couple of minutes before serving.

Makes 8 servings.

Recipe: Fusilli with Chicken and Tomatoes

Can you tell I'm having a very lazy Sunday? I'm on a cooking spree!!! Yes, I skipped the Folsom Street Fair this year. I've seen enough nekkid grandpas to last me at least 4 reincarnations so I decided to hide at home with my pooch this year. Anyways, on to the recipe...

Ingredients:

1 lb. dry fusilli pasta
3 tbsp. olive oil
2 cups diced roma tomatoes (approximately 6 - 7 tomatoes)
1 cup diced heirloom tomatoes (approximately 1 - 2 tomatoes; I used a yellow one and a purple one)
1 cup canned unflavored tomato sauce
3 tbsp. of minced garlic
2 tbsp. of chopped fresh basil
1 tbsp. of chopped fresh sage
1 tsp. of dried oregano
1 tsp. of sea salt
1/2 - 2/3 tsp. of cracked red pepper flakes (I use 2/3 'cause I like a little heat ;))
1 1/2 lb. of boneless, skinless chicken breast

Directions:

Add 1 tbsp. of olive oil to a big pot of water, bring to a boil, and cook fusilli according to package directions.

Cut the chicken breast into cubes. In a separate large pan, heat the remaining two tbsp. of olive oil over medium-high heat. Add the minced garlic and sautee until the garlic is cooked (about 2 - 3 minutes). Add the chicken breast and cook until cooked through and browned on all sides. Once the chicken is cooked, add the tomatoes, oregano, sea salt, and cracked red pepper flakes. Mix thoroughly, reduce heat to low, and simmer for about 7 - 8 minutes.

Drain the pasta and pour into a large bowl. Add the chicken and tomato mixture along with the fresh basil and sage, mix thoroughly, let stand about 2 minutes to let flavors combine. Serve with grated parmesan if desired.

Makes about 6 servings.
