Recipe: Pad Kee Mao

Ingredients:

2/3 lb. boneless/skinless chicken breast, thinly sliced
2/3 lb. boneless/skinless chicken thigh, thinly sliced
1 leek, finely chopped
1 bunch of scallions, finely chopped
1 large habanero, finely chopped
3 tbsp. minced garlic
3/4 cup loosely packed holy basil (Thai basil is OK if you can't find holy basil)
1 large red bell pepper, cut into thin strips
1 large yellow bell pepper, cut into thin strips
Juice of 2 limes
1/4 cup oyster sauce
1/4 cup fish sauce
3 tbsp. dark soy sauce
3 tbsp. white wine
2 eggs, beaten
1/2 bunch cilantro, chopped
1 package (500 g/18 oz) of wide rice noodles, cooked
2 tbsp. canola oil

Directions:

Cook noodles according to package directions, chilling immediately with cold water after cooking.  Heat canola oil in the wok over high heat.  Add leek, scallion, habanero, and garlic.  Cover, cook for 2 minutes until fragrant.  Add chicken, mix vigorously.  Re-cover for about 3 minutes.  Remove cover and continue cooking until chicken is about 2/3 cooked.  Add bell pepper and holy basil.  Cover and cook for about 3 minutes more until the bell pepper is tender and the holy basil wilts.  Once chicken is fully cooked, push all ingredients to one side in the wok.  Add the beaten eggs to the other side.  Once the egg is close to set, vigorously mix all of the ingredients together.  Whisk lime juice, oyster sauce, fish sauce, dark soy, and white wine together.  Add to the wok and mix vigorously.  Add the cooked noodles and cilantro and turn off heat.  Mix all ingredients together completely, coating noodles completely in the mixture.  Serve immediately.

Makes 8 servings.

Recipe: Roasted Curry Vegetable Soup

This was just so darn good, especially as the weather has gotten chilly around here...

Ingredients:

1 large rutabaga, peeled, cut into chunks
1 large russet potato, peeled, cut into chunks
1 large fennel bulb, fronds removed, cut into chunks
1 large cauliflower, separated into florets
1 large red bell pepper, cut into large chunks
1 large leek, ends removed, chopped finely
3 tbsp. minced garlic
3 tsp. curry powder
1 1/2 tsp. Chinese five spice powder
1 tsp. ground white pepper
1 tsp. ground cardamom
1 tsp. ground coriander
1 tsp. dried mint
1 tsp. celery salt
1 tsp. ground cumin
1/2 tsp. turmeric
1 tbsp. kosher salt
1 tbsp. ground black pepper
1/3 cup butter
1/4 cup olive oil
4 cups chicken or vegetable broth
1 cup heavy cream
1/2 cup dry vermouth
1/2 cup water

Directions:

Preheat oven to 350. Place chunked rutabaga, potato, fennel, cauliflower, and bell pepper into a large roasting pan. Drizzle 1/2 of the olive oil over the vegetables. Sprinkle evenly with the kosher salt and black pepper. Use a wooden spoon to mix the vegetables well and ensure they are coated evenly with olive oil. Roast the vegetables for 35 minutes.

In a large stock pot, melt the butter in the remaining olive oil over medium high heat. Add the leeks and garlic, cover, and saute for about 10 - 12 minutes, stirring occasionally. Add all the roasted vegetables to the stock pot. Add all of the remaining spices, chicken broth, heavy cream, and vermouth and stir well to combine. Raise heat to high and cook, uncovered, until boiling. Once boiling, reduce heat to medium-low and recover and simmer for about 25 minutes, stirring occasionally. Remove from heat. Using a hand blender, puree the soup until thick and creamy. Serve immediately.

Makes about 10 servings.

Recipe: Spicy Shrimp and Chicken Lettuce Wraps

Ingredients:

1 lb. ground chicken
1/2 lb. peeled and deveined shrimp
1 red bell pepper, diced
1 bunch of spinach, loosely chopped
3 tbsp. minced garlic
1/2 tsp. white pepper
2 tsp. red pepper flakes
2 tsp. lemon zest
1 tsp. sea salt
1 1/2 tbsp. sugar
1/3 cup dark soy sauce
1/4 cup dry sherry
1 head of magenta or other leafy lettuce, washed and left as whole leaves
2 tbsp. canola or other neutral oil

Directions:

In a large wok or stir fry pan, heat the oil over medium high heat. Once the oil is hot, add the garlic and bell pepper. Cover and cook for 3 - 4 minutes until the peppers are soft. Add the ground chicken. Add the dry spices, lemon zest, and sugar. Cook for approx. 7 - 8 minutes, stirring frequently until chicken is fully cooked. Add the shrimp and cook for approximately 1 - 2 minutes until shrimp are pink. Add the soy sauce and sherry and combine. Add the spinach, recover and cook for 4 - 5 minutes until the spinach wilts. Uncover, stir well, reduce heat to medium low, and cook for an additional 10 minutes to reduce. Serve with the lettuce leaves.

Makes 4 - 5 dinner servings or 8 - 10 appetizer servings.

Recipe: Shrimp Creole

Ingredients:

2 lbs. of peeled and deveined shrimp
3 bell peppers, preferably red or yellow, diced
3 tbsp. minced garlic
2 tsp. cayenne pepper
1 tsp. ground black pepper
1 tsp. paprika
2 tsp. salt
1 tsp. ground oregano
1 tsp. dried thyme
1 tsp. dried tarragon
1 tsp. ground cumin
2 habanero peppers, finely diced
1 1/2 cups of yellow onion, diced
3 cups of diced tomatoes (1 large can), drained
1/4 cup of butter (approx. 1/2 stick)
1/4 cup of canola oil
4 tbsp. rice flour
1/2 cup of water
2 tbsp. olive oil

Directions:

Heat the olive oil in a skillet over medium-high heat. Add the onions, bell peppers, habaneros, and garlic and saute until the onions are translucent - approximately 10 minutes. In a deep pan, heat the butter and canola oil over medium heat until the butter is fully melted and the mixture is hot. Add the flour to the oil mixture slowly, stirring to make a thick roux. Heat the roux until it turns a light brown color, stirring frequently. Stir in the water, dry spices, shrimp, tomatoes and the sauteed onion/pepper mixture. Cover and simmer, stirring occasionally, for approximately 10 - 15 minutes until the shrimp are pink. Final consistency should be similar to a gravy. If not thick enough for you, mix 2 tsp. of cornstarch into 1 tbsp. of warm water and stir into the plan to thicken. Serve over rice.

Makes 8 servings.

Recipe: Scalloped Tomatoes Provencal

Yeah, it's a Sunday, so I'm in a cooking mood... this is dinner :)

Ingredients:

5 - 6 large heirloom tomatoes
1 orange or yellow bell pepper
1 French baguette, cubed
2 tbsp. of olive oil
4 oz. of pancetta, diced
2 tbsp. of butter
2 tbsp. of minced garlic
1 tsp. of black pepper
1/2 tsp. of white pepper
2 tsp. of Herbs de Provence

Directions:

Spread baguette cubes out on a large baking sheet, drizzle with olive oil, and bake at 400 degrees for about 5 minutes or so to toast.

In a skillet, melt the butter over medium heat and add the diced pancetta and garlic. Cook until the pancetta browns, about 7 - 8 minutes.

Reduce heat on the oven to 325 degrees. Dice the heirloom tomatoes and bell pepper and put into a large bowl. Add the baguette croutons, pancetta in butter and garlic, and the other spices to the bowl. Mix thoroughly. Coat a large casserole dish with cooking spray. Pour the tomato mixture into the casserole dish, cover the dish with aluminum foil, and bake for 50 - 55 minutes. Let cool for about 5 minutes before serving.

Makes 6 - 8 servings.

Recipe: Eggplant in Spicy Garlic Sauce

Ingredients:

1 1/2 pound eggplant, cut into thick strips
1 bell pepper, red, diced
6 tbsp. sugar
4 tbsp. low-sodium soy sauce
3 tbsp. white vinegar
3 tbsp. rice vinegar
2 tbsp. dry sherry
2 tbsp. cornstarch
1 tsp. chili oil
2 tbsp. Sriracha (Vietnamese garlic/chili sauce)
2 tbsp. dark sesame oil
3 tbsp. canola oil
12 garlic cloves, minced
1 cup scallions, finely chopped, white and green parts

Directions:

In a colander, toss eggplant strips with the cornstarch to coat evenly. In a bowl, combine sugar, soy sauce, white vinegar, rice vinegar, dry sherry, chili oil, Sriracha, dark sesame oil, and minced garlic together. Whisk to combine. Heat the canola oil in a wok over high heat. Once oil is hot, add the eggplant strips. Saute them, turning frequently, until they are lightly browned - about 6 - 7 minutes. Add the sauce mixture, reduce the heat to medium, and continue stirring. The sauce will begin to thicken (feel free to add an additional 1 tsp. of cornstarch if it does not thicken to your liking). Once the sauce is thickened, add the bell pepper and scallions and mix together to combine. Remove from heat and serve.

Variation:

Add 8 - 12 oz. of cubed firm tofu to the oil in the wok first. Once it starts to brown, then add the eggplant and follow the directions above.

Makes about 4 servings.

Recipe: The Chicken and the Egg Tacos

This is a breakfast dish I cooked up that blends a little bit of my southern roots with some West Coast Mexican flavors. In the south, chicken and egg biscuits are a common breakfast dish because both chicken and eggs are so plentiful in the south. Heck, my home state of Georgia is the largest producer of both, which should tell you something. But, I didn't feel like going through the effort of making biscuits this morning, so I added a few Mexican touches to get a completely different concoction that turned out really well.

Ingredients:

1 lb. boneless, skinless chicken breasts
4 large eggs
1 large green heirloom tomato (other colors are OK, I just prefer the green :))
1 red bell pepper
1/2 cup chopped scallions, green and white parts
2 tsp. minced garlic
1 tsp. cumin
1 tsp. paprika
1/2 tsp. of chipotle chili powder
1 tsp. kosher salt
2/3 cup of shredded pepper jack cheese
8 small flour tortillas (soft taco size)
2 1/2 tbsp. of olive oil
2 tbsp. of milk (I use non-fat)
Salt and pepper to taste

Directions:

Dice the heirloom tomato and red bell pepper together into a medium sized bowl. Add the scallions, garlic, cumin, paprika, chipotle chili powder, and kosher salt and mix together. Cover and place in the refrigerator.

Pound the chicken breasts out between two sheets of wax paper until they are a little more than 1/4 inch thick. Sprinkle generously with salt and pepper. Put 2 tbsp. of olive oil in a large skillet over medium heat. Sautee the chicken breasts in the olive oil about 10 - 12 minutes, turning frequently, until browned and cooked completely through. Cut the cooked chicken into thin strips and set aside.

In a small skillet, put 1/2 tbsp. of olive oil over medium heat. In a small bowl, whisk the eggs together with a little salt and pepper and the milk until fully beaten. Place the eggs in the skillet and cook until fully scrambled, turning and separating constantly.

Warm the tortillas either in the microwave or in the oven according to package directions. Get the salsa mixture you made earlier from the refrigerator. In each tortilla, place equal portions of the scrambled egg, sliced chicken, pepper jack cheese, and salsa. Fold and serve!

Makes 4 servings (two tacos per serving).
